4 large bell peppers (any color)

1 lb (450g) ground chicken

1 cup fresh pineapple, diced

1/2 cup teriyaki sauce

1/2 cup cooked jasmine rice

1/2 cup green onions, chopped (plus extra for garnish)

1 clove garlic, minced

1 tsp fresh ginger, grated

1/2 tsp salt

1/2 tsp black pepper

1/4 cup shredded mozzarella cheese (optional)

Sesame seeds for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Bell Peppers: Slice the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.

      Cook the Chicken: In a large skillet over medium heat, add the ground chicken. Cook until browned, about 5-7 minutes, breaking it apart as it cooks.

        Add Flavors: Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.

          Combine Ingredients: Add the diced pineapple, teriyaki sauce, cooked jasmine rice, chopped green onions, salt, and pepper to the pan. Stir well to combine and let it simmer for about 3-5 minutes.

            Stuff the Peppers: Carefully spoon the chicken mixture into each bell pepper until they are packed full.

              Add Cheese: If desired, sprinkle shredded mozzarella cheese on top of each stuffed pepper.

                Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, until the peppers are tender and the cheese is melted and bubbly.

                  Garnish and Serve: Remove the stuffed peppers from the oven and let them cool slightly. Garnish with extra chopped green onions and sesame seeds before serving.
