Ingredients

1 lb boneless, skinless chicken thighs, diced

4 tablespoons unsalted butter

3 cloves garlic, minced

1 small onion, diced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon turmeric powder

1 teaspoon chili powder (adjust for spice preference)

1 cup heavy cream

1/2 cup chicken broth

1 tablespoon fresh lemon juice

Salt and pepper to taste

Fresh cilantro, chopped for garnish

Cooked jasmine rice or naan, for serving

Instructions

Sear the Chicken: In a large skillet over medium-high heat, melt 2 tablespoons of butter. Add the diced chicken thighs, season with salt and pepper, and sear them until golden brown, about 5-7 minutes. Remove the chicken from the skillet and set aside.

Sauté Aromatics: In the same skillet, melt the remaining 2 tablespoons of butter. Add the diced onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.

Spice It Up: Stir in the smoked paprika, ground cumin, turmeric, and chili powder. Cook for 1-2 minutes, allowing the spices to bloom and coat the onions and garlic.

Create the Sauce: Pour in the heavy cream and chicken broth, stirring until combined. Bring to a gentle simmer.

Add the Chicken: Return the seared chicken to the skillet. Simmer on low heat for 10-12 minutes, allowing the chicken to absorb the flavors and the sauce to thicken slightly.

Finish with Lemon: Stir in the fresh lemon juice, adjusting the seasoning with salt and pepper to taste.

Garnish and Serve: Remove from heat and garnish with chopped cilantro. Serve over jasmine rice or with warm naan for a delightful meal.
