1 ½ cups warm water (110°F to 115°F)

1 packet (2 ¼ tsp) active dry yeast

1 tbsp granulated sugar

4 cups all-purpose flour

1 tsp kosher salt

½ cup unsalted butter, melted (for brushing)

1/4 cup baking soda (for the boiling water)

Coarse sea salt, for sprinkling

Activate Yeast: In a large mixing bowl, combine the warm water, yeast, and sugar. Let it sit for about 5 minutes until it becomes foamy.

    Make the Dough: Gradually add the flour and kosher salt to the yeast mixture. Mix with a wooden spoon or dough hook until combined, then knead on a floured surface for about 5 minutes until smooth.

      First Rise: Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

        Prepare Water Bath: In a large pot, bring 4 cups of water to a boil and add the baking soda. Set aside.

          Shape Pretzel Bites: Once the dough has risen, punch it down and turn it out onto a floured surface. Divide the dough into 8 equal pieces. Roll each piece into a 1-inch thick rope and cut into 1-inch pieces.

            Boil Pretzel Bites: Carefully drop the pretzel bites into the boiling water (you can boil them in batches). Boil for about 30 seconds on each side. Remove with a slotted spoon and drain on a paper towel.

              Bake: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper. Arrange the pretzel bites on the sheet and brush them with melted butter. Sprinkle with coarse sea salt.

                Final Bake: Bake the pretzel bites in the preheated oven for 12-15 minutes or until golden brown.
