8 medium apples (a mix of sweet and tart varieties, like Honeycrisp and Granny Smith)

1 orange, sliced

8 cups water

1 cup brown sugar (adjust to taste)

1 tablespoon whole cloves

1 tablespoon allspice berries

4 cinnamon sticks

1 tablespoon vanilla extract

Optional: additional spices (nutmeg, star anise) to taste

Instructions
 

Begin by washing and coring the apples. Cut them into quarters; there's no need to peel them.

    In the crockpot, combine the quartered apples, sliced orange, water, brown sugar, cloves, allspice berries, cinnamon sticks, and vanilla extract.

      Stir everything together gently to ensure the apples are well-mixed with the other ingredients.

        Cover and cook on low for 6-8 hours or high for 3-4 hours. The longer you cook, the more intense the flavor will be.

          Once the cider has finished cooking, use a potato masher or a large wooden spoon to mash the mixture gently, breaking up the apples and releasing their juices.

            Strain the cider through a fine-mesh sieve or cheesecloth into a large bowl or container, discarding the solids.

              Taste the cider and adjust sweetness if needed by adding more brown sugar.
