Ingredients

1 cup water

½ cup unsalted butter, cut into pieces

1 tablespoon granulated sugar

½ teaspoon salt

1 cup all-purpose flour

4 large eggs

1 teaspoon vanilla extract

Oil for frying (such as canola or vegetable)

1 cup powdered sugar (for glazing)

2-3 tablespoons milk (for glazing)

Optional: a pinch of nutmeg or cinnamon for flavor

Instructions

Prepare the Choux Pastry: In a medium saucepan, combine water, unsalted butter, sugar, and salt. Bring to a boil over medium heat until the butter is fully melted. Remove from heat and immediately add the flour, stirring vigorously with a wooden spoon until a dough forms.

Incorporate Eggs: Allow the dough to cool slightly for about 5 minutes. Then, add the eggs one at a time, stirring well after each addition until fully incorporated. Once all eggs are added, the dough should be smooth and shiny. Stir in the vanilla extract and optional nutmeg or cinnamon.

Pipe the Crullers: Fill a piping bag fitted with a large star tip (such as a Wilton 1M) with the choux pastry. Pipe 4-inch circles on parchment paper, creating a donut shape (a smaller circle inside the larger one) and leaving space between them.

Heat the Oil: In a deep pot or dutch oven, heat about 2-3 inches of oil to 350°F (175°C). Use a thermometer for accuracy to ensure the oil is hot enough for frying.

Fry the Crullers: Carefully place a few piped crullers into the hot oil, deciding how many will fit without crowding. Fry for about 3-4 minutes on each side until golden brown. Use a slotted spoon to transfer the crullers onto a paper towel-lined plate to drain excess oil.

Prepare the Glaze: In a mixing bowl, whisk together the powdered sugar and milk until smooth and slightly runny. You can adjust the consistency by adding more powdered sugar or milk as needed.

Glaze the Crullers: Once the crullers are fully cooled, dip each one into the glaze, allowing any excess to drip off. Place on a cooling rack to let the glaze set.

Serve and Enjoy: Serve your freshly made crullers to friends and family. Enjoy them warm for a delightful treat or at room temperature with a cup of coffee or tea.
