4 large russet potatoes, thinly sliced (about 1/8 inch thick)

1 medium onion, finely chopped

2 cups heavy cream

1 cup whole milk

3 cups shredded sharp cheddar cheese

2 cloves garlic, minced

1 teaspoon fresh thyme or 1/2 teaspoon dried thyme

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1/4 cup unsalted butter, melted

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Baking Dish: Grease a 9x13 inch baking dish with a bit of melted butter or non-stick spray.

      Layer the Potatoes and Onions: Place half of the sliced potatoes in an even layer along the bottom of the baking dish. Sprinkle half of the chopped onion over the potatoes.

        Make the Cream Mixture: In a medium saucepan over medium heat, combine the heavy cream, whole milk, minced garlic, thyme, smoked paprika, salt, and pepper. Heat until warmed through—don’t let it boil.

          Add Cheese: Remove the cream mixture from heat and stir in 2 cups of the shredded cheddar cheese until melted and smooth.

            Assemble the Dish: Pour half of the cream and cheese mixture over the potato and onion layer. Repeat the layers with the remaining potatoes, onions, and then pour the remaining cheese mixture on top.

              Top with Cheese and Butter: Sprinkle the remaining shredded cheddar cheese evenly over the top layer. Drizzle the melted butter over everything for added richness.

                Bake: Cover the dish with aluminum foil and bake in the preheated oven for about 45 minutes. Then, remove the foil and bake for another 25-30 minutes, or until the top is golden brown and the potatoes are tender when pierced with a fork.

                  Cool and Serve: Once done, let the scalloped potatoes cool for about 10-15 minutes. This will help set the layers. Garnish with fresh parsley before serving.
