1 cup all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 large ripe banana, mashed

1 cup buttermilk (or milk with 1 tablespoon lemon juice added)

1 large egg

2 tablespoons melted butter, plus extra for cooking

1 teaspoon vanilla extract

Optional: chopped walnuts or chocolate chips for added flavor

Instructions
 

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until evenly combined.

    In another bowl, mix the mashed banana, buttermilk, egg, melted butter, and vanilla extract until smooth.

      Pour the wet ingredients into the dry ingredients and gently fold them together until just combined. Be careful not to overmix; it’s okay if there are a few lumps.

        If desired, fold in chopped walnuts or chocolate chips for extra texture and flavor.

          Heat a non-stick skillet or griddle over medium heat and add a small amount of butter to coat the surface.

            Pour about 1/4 cup of pancake batter into the skillet for each pancake. Cook until bubbles start to form on the surface and the edges look set, about 2-3 minutes.

              Flip the pancakes and cook for an additional 2-3 minutes until golden brown and fluffy.

                Remove the pancakes from the skillet and keep them warm in a low oven while you cook the remaining batter.
