6 large eggs

1/4 cup milk (or cream for a richer taste)

1 cup fresh spinach, chopped

1/2 cup cherry tomatoes, halved

1/2 cup bell peppers, diced (any color)

1/2 cup mushrooms, sliced

1 small onion, diced

1/2 cup cheese (feta, goat cheese, or cheddar work well)

2 tablespoons olive oil

Salt and pepper to taste

Fresh herbs (such as basil or parsley) for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté Vegetables: In a large, oven-safe skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent. Then, add the mushrooms, bell peppers, and cook for about 5 minutes until softened. Stir in the chopped spinach and halved cherry tomatoes, cooking until the spinach wilts. Season with salt and pepper.

      Whisk Eggs: In a bowl, whisk together the eggs and milk until well combined. Add salt and pepper to taste.

        Add Cheese: Stir in the cheese of your choice into the egg mixture.
