For the Cheesecake Layer:

2 cups cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 cup sour cream

1 teaspoon lemon juice

For the Peach Cobbler Topping:

4 large ripe peaches, pitted and sliced

1 cup brown sugar

1 teaspoon cinnamon

1 teaspoon vanilla extract

1 tablespoon cornstarch

1 tablespoon lemon juice

For the Crust:

1 ½ cups crushed graham crackers

½ cup unsalted butter, melted

1/4 cup granulated sugar

1/4 teaspoon salt

For Garnish:

Whipped cream

Fresh peach slices

Mint leaves (optional)

Instructions
 

Prepare the Crust:

    - Preheat the oven to 325°F (160°C).

      - In a medium mixing bowl, combine the crushed graham crackers, melted butter, granulated sugar, and salt. Mix until well combined.

        - Press the mixture into the bottom of a 9-inch springform pan evenly. Bake for 8-10 minutes until slightly golden. Remove from the oven and let it cool.

          Make the Cheesecake Layer:

            - In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

              - Gradually add the granulated sugar and continue mixing until fully incorporated.

                - Mix in the vanilla extract, then add the eggs one at a time, mixing well after each addition.

                  - Stir in the sour cream and lemon juice until fully combined.

                    - Pour the cheesecake batter over the cooled crust, smoothing it out evenly.

                      Bake the Cheesecake:

                        - Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly.

                          - Turn off the oven and crack the door, allowing the cheesecake to cool gradually for 1 hour. Then, refrigerate for at least 4 hours, preferably overnight.

                              - In a medium saucepan over medium heat, combine the sliced peaches, brown sugar, cinnamon, vanilla extract, cornstarch, and lemon juice.

                                  Assemble the Dessert:

                                      Serve:
