Ingredients

1 box yellow cake mix

3 large eggs

1 cup water

1 can (21 oz) cherry pie filling

1 cup sweetened condensed milk

1 cup heavy whipping cream

1/4 cup powdered sugar

1 teaspoon vanilla extract

Maraschino cherries for garnish

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Cake:

    - Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.

      - In a large mixing bowl, combine the yellow cake mix, eggs, and water. Beat on medium speed for about 2 minutes until well combined.

        - Pour the batter into the prepared baking pan and smooth the top with a spatula.

          - Bake for 28-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool in the pan for about 10 minutes.

            Poke the Cake:

              - Using the handle of a wooden spoon or a skewer, make deep holes all over the surface of the warm cake, about 1 inch apart. Be sure to poke down to the bottom of the cake for maximum flavor absorption!

                Add the Fillings:

                  - In a separate mixing bowl, combine the cherry pie filling and sweetened condensed milk. Stir until well mixed.

                    - Pour the cherry and milk mixture evenly over the cake, allowing it to seep into the holes. Spread it gently with a spatula to ensure even distribution. Let the cake cool completely at room temperature.

                      Prepare the Topping:

                        - In a medium bowl, whip the heavy cream with the powdered sugar and vanilla extract using an electric mixer. Beat until stiff peaks form.

                          - Once the cake is completely cooled, spread the whipped cream over the top evenly, creating smooth peaks or swirls.

                            Garnish and Serve:

                              - Decorate with additional cherry pie filling, maraschino cherries, and fresh mint leaves if desired.

                                - Cut into squares and serve chilled or at room temperature. Enjoy every bite of this delightful Cherry Poke Cake!
