This Creamy Butter Chicken Magic

1.5 lbs (680g) boneless chicken thighs, cut into cubes

1 cup plain yogurt

2 tablespoons lemon juice

2 tablespoons ground cumin

1 tablespoon ground coriander

1 teaspoon turmeric powder

2 teaspoons garam masala

1 teaspoon chili powder (adjust to taste)

Salt, to taste

3 tablespoons vegetable oil

1 large onion, finely chopped

4 cloves garlic, minced

1 tablespoon ginger, grated

1 can (15 oz) crushed tomatoes

1 cup heavy cream

4 tablespoons unsalted butter

Fresh cilantro, for garnish

Cooked basmati rice, for serving

Instructions
 

Marinate the Chicken: In a large bowl, combine the yogurt, lemon juice, cumin, coriander, turmeric, garam masala, chili powder, and salt. Add the chicken cubes and stir until well-coated. Cover and marinate in the refrigerator for at least 1 hour, or preferably overnight for best flavor.

    Cook the Chicken: Heat the vegetable oil in a large skillet over medium heat. Add the marinated chicken (reserve any leftover marinade) and cook for approximately 5-7 minutes until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add the chopped onion and sauté for about 5 minutes until softened and lightly golden. Add the minced garlic and grated ginger, stirring for another minute until fragrant.

        Create the Sauce: Pour in the crushed tomatoes and the reserved marinade. Bring it to a simmer and let it cook for about 10 minutes, stirring occasionally, until the sauce thickens slightly.

          Add Cream and Butter: Reduce the heat to low, and then slowly add in the heavy cream and butter. Stir until the butter is melted and the sauce is smooth.

            Combine Chicken and Sauce: Return the cooked chicken to the skillet, stirring to coat it thoroughly in the creamy sauce. Simmer for another 5-10 minutes to allow the flavors to meld together. Adjust salt and spice level to taste.

              Serve: Garnish the butter chicken with fresh cilantro. Serve hot over a bed of fluffy basmati rice.
