1 cup mascarpone cheese

1 cup heavy cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/2 cup strong brewed coffee (cooled)

1/2 cup coffee liqueur (like Kahlúa)

1 cup crushed ladyfinger cookies (or savoiardi)

2 tablespoons cocoa powder (for coating)

1/2 cup dark chocolate (melted for drizzling)

Instructions
 

Prepare the Whipped Cream: In a large mixing bowl, use an electric mixer to beat the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form. Set aside.

    Mix the Mascarpone: In another bowl, gently mix the mascarpone cheese, cooled brewed coffee, and coffee liqueur until smooth and creamy.

      Combine the Mixtures: Carefully fold the whipped cream into the mascarpone mixture, ensuring to keep the mixture light and airy. Then, gently fold in the crushed ladyfinger cookies until evenly distributed.

        Chill the Mixture: Cover the bowl with plastic wrap and refrigerate the truffle mixture for at least 2 hours, or until it’s firm enough to handle.

          Shape the Truffles: Once chilled, use a small cookie scoop or your hands to form small balls (about 1 inch in diameter). Place the truffles on a baking sheet lined with parchment paper.

            Coat the Truffles: Roll the truffles in cocoa powder to coat them evenly. If desired, drizzle the melted dark chocolate over the truffles for an added touch of sweetness.

              Final Chill: Place the coated truffles back in the fridge for about 30 minutes to set the chocolate.
