Ingredients
  

400g firm tofu, pressed and cubed

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon olive oil

2 cups broccoli florets

1 bell pepper, sliced (any color)

1 medium carrot, julienned

1 cup snap peas

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 green onions, chopped

1 tablespoon cornstarch

2 tablespoons water

Salt and pepper to taste

Sesame seeds for garnish

Prepare the Tofu: Start by pressing the tofu to remove excess moisture. Cut it into cubes and marinate in soy sauce for about 15 minutes.

    Cook the Tofu: Heat 1 tablespoon of sesame oil in a large non-stick skillet or wok over medium-high heat. Add the marinated tofu cubes and sauté until golden brown on all sides, about 5-7 minutes. Remove tofu from the pan and set it aside.

      Stir Fry the Vegetables: In the same pan, add olive oil and increase heat to high. Add garlic and ginger, stir-frying for about 30 seconds until fragrant. Then, add broccoli, bell pepper, carrot, and snap peas. Stir-fry the vegetables for 5-6 minutes until they're tender-crisp.

        Combine Tofu and Veggies: Return the cooked tofu to the pan with the vegetables. In a small bowl, mix cornstarch and water until smooth, then add this mixture to the pan. Stir well and cook for an additional 2-3 minutes until the tofu and veggies are evenly coated and heated through. Season with salt and pepper to taste.

          Garnish and Serve: Remove from heat and sprinkle chopped green onions and sesame seeds on top. Serve hot over steamed rice or noodles of your choice.
