Tom Kha Gai Soup

Ingredients
  

1 lb boneless, skinless chicken thighs, sliced thinly

4 cups coconut milk

2 cups chicken broth

3 Kaffir lime leaves, torn

1 stalk lemongrass, trimmed and smashed

3-4 slices galangal (or ginger if unavailable)

4-5 Thai bird’s eye chilies, smashed (adjust for desired heat)

200g mushrooms, sliced (shiitake or button mushrooms work well)

1-2 tablespoons fish sauce (to taste)

2 tablespoons lime juice (freshly squeezed)

1 teaspoon sugar (preferably palm sugar)

Fresh cilantro leaves, for garnish

Sliced green onions, for garnish

Optional: Thai chili oil, for drizzling

Instructions
 

Prepare the Soup Base: In a large pot, combine the coconut milk and chicken broth. Heat it over medium heat until it's just simmering.

    Infuse Flavors: Add the torn Kaffir lime leaves, smashed lemongrass, galangal, and bird’s eye chilies to the pot. Let it simmer for about 10 minutes to infuse the flavors.

      Cook the Chicken: Add the sliced chicken thighs to the pot. Stir gently and let it cook for about 5-7 minutes, or until the chicken is fully cooked and tender.

        Add Mushrooms: Stir in the sliced mushrooms and cook for an additional 3-4 minutes until they are tender.

          Season the Soup: Add fish sauce, lime juice, and sugar. Stir well and taste to adjust seasoning as necessary. You may want to add more fish sauce or lime juice based on your preferences.

            Finish and Serve: Remove the pot from heat. Scoop the soup into bowls and garnish with fresh cilantro leaves and sliced green onions. For an extra kick, drizzle with Thai chili oil if desired.

              Enjoy: Serve the Tom Kha Gai hot, alongside jasmine rice or on its own as a flavorful soup.
