1 package of fresh cheese tortellini (about 9 ounces)

1 cup cherry tomatoes, halved

1 medium zucchini, diced

1 yellow bell pepper, diced

1 cup fresh spinach leaves

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

Grated Parmesan cheese for serving

Fresh basil leaves for garnish

Instructions
 

Cook the Tortellini: In a large pot, bring salted water to a boil. Add the fresh tortellini and cook according to package instructions, usually about 3-5 minutes. Drain and set aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

      Add Veggies: Add the diced zucchini and yellow bell pepper to the skillet. Cook for 4-5 minutes until they start to soften. Then, add the halved cherry tomatoes and cook for another 3 minutes.

        Mix in Spinach: Stir in the fresh spinach, dried basil, and oregano. Cook until the spinach wilts, which should take about 2 minutes. Season with salt and pepper to taste.

          Combine: Gently toss the cooked tortellini with the sautéed vegetables in the skillet. Stir well to combine and heat through, about 1-2 minutes.

            Serve: Plate the tortellini with veggies, and top with grated Parmesan cheese and fresh basil leaves for garnish.
