2 cups cooked chicken, diced (preferably rotisserie or poached)

1/2 cup celery, finely chopped

1/2 cup red grapes, halved

1/4 cup walnuts, chopped (optional)

1/4 cup mayonnaise

1/4 cup Greek yogurt (for a lighter option)

1 tablespoon Dijon mustard

1 teaspoon lemon juice

Salt and pepper to taste

Lettuce leaves for serving (optional)

Fresh parsley for garnish (optional)

Instructions
 

Prepare the Chicken: If not already done, cook the chicken by poaching or roasting until thoroughly cooked. Let it cool before dicing into bite-sized pieces.

    Mix the Dressing: In a large bowl, combine the mayonnaise, Greek yogurt, Dijon mustard, lemon juice, salt, and pepper. Whisk together until smooth.
