Ingredients
  

1.5 lbs ground beef or a mix of beef and pork

1 cup breadcrumbs

1 medium onion, finely chopped

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

2 large eggs (plus 2 for boiling)

1 tablespoon tomato paste

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

1 cup grated cheese (optional)

Olive oil for sautéing

1 teaspoon mustard (for topping)

1 tablespoon ketchup (for topping)

Instructions
 

Prepare the Eggs: Start by boiling 2 eggs until hard-boiled (about 10-12 minutes). Let them cool, then peel and set aside.

    Sauté Onions and Garlic: In a skillet, heat a little olive oil over medium heat. Add the chopped onion and cook until translucent (around 5 minutes). Add the minced garlic and sauté for another minute until fragrant. Remove from heat and let cool.

      Mix the Meatloaf Filling: In a large mixing bowl, combine the ground meat, breadcrumbs, sautéed onions and garlic, chopped parsley, 2 raw eggs, tomato paste, thyme, paprika, salt, and pepper. Mix thoroughly until well combined.

        Shape the Meat Mixture: On a large piece of plastic wrap, spread half of the meat mixture into a rectangle, about 1 inch thick. Make a channel down the center of the rectangle for the filling.

          Add the Eggs: Place the hard-boiled eggs in the center of the channel. If using, sprinkle grated cheese around the eggs for extra flavor.

            Form the Meatloaf: Carefully fold the meat mixture over the eggs, sealing the edges to completely encase them. Shape the meatloaf into a loaf form.

              Preheat the Oven: Preheat your oven to 350°F (175°C).

                Prepare for Baking: Transfer the meatloaf to a lightly greased baking dish. Mix the mustard and ketchup in a small bowl and spread it over the top of the meatloaf for added flavor and a nice glaze.

                  Bake the Meatloaf: Bake the meatloaf in the preheated oven for about 1 hour, or until the internal temperature reaches 160°F (70°C).

                    Rest and Serve: Once done, let the meatloaf rest for about 10-15 minutes before slicing. This allows the juices to redistribute and makes for cleaner slices.
