2 lbs ground beef (80/20 blend)

1 cup breadcrumbs (Italian seasoned)

1/2 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

1/2 cup pizza sauce (plus extra for topping)

1/4 cup chopped fresh parsley

1 tablespoon dried oregano

1 tablespoon dried basil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup diced pepperoni (optional)

1/2 cup diced bell peppers (optional)

2 large eggs

Preheat the Traeger: Begin by preheating your Traeger grill to 350°F (175°C).

    Mix the Meatloaf Ingredients: In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, mozzarella cheese, pizza sauce, parsley, oregano, basil, garlic powder, onion powder, salt, black pepper, and eggs. Get your hands in there and mix until just combined. Be careful not to overmix.

      Add Extra Flavor (Optional): If using, fold in the diced pepperoni and diced bell peppers for that extra pizza punch.

        Form the Loaf: Transfer the meat mixture onto a piece of parchment paper on a baking pan and shape it into a loaf, ensuring an even thickness for uniform cooking.

          Apply the Sauce: Spread a thin layer of pizza sauce over the top of the meatloaf to create a delicious crust.

            Smoke the Meatloaf: Place the meatloaf on the preheated Traeger grill, close the lid, and let it smoke for approximately 1 hour or until the internal temperature reaches 160°F (71°C).

              Finish with Cheese: In the last 10 minutes of cooking, sprinkle additional mozzarella cheese on top, and allow it to melt for that gooey finish.

                Rest and Serve: Once cooked, remove the meatloaf from the grill and let it rest for about 10 minutes before slicing. This will help retain its juicy flavor. Serve with extra pizza sauce on the side!
