Ingredients

1 lb large shrimp, peeled and deveined

1/2 cup cornstarch

1/2 cup flour

1 tsp baking powder

1/2 tsp salt

1/2 tsp black pepper

1 tsp garlic powder

1/2 cup buttermilk

1/4 cup mayonnaise

2 tablespoons sriracha sauce (adjust to taste)

1 tablespoon honey

1 tablespoon soy sauce

1/4 cup chopped green onions (for garnish)

Oil for frying

Instructions

Prep Shrimp: Pat the shrimp dry with paper towels and set aside.

Make Batter: In a large bowl, mix the cornstarch, flour, baking powder, salt, pepper, and garlic powder until combined. In a separate bowl, whisk together the buttermilk until smooth.

Coat Shrimp: Dip each shrimp into the buttermilk and then toss in the flour mixture, ensuring they are well-coated.

Heat Oil: In a large skillet, heat oil over medium-high heat until it shimmers (about 350°F or 175°C).

Fry Shrimp: Working in batches, fry the shrimp for 2-3 minutes, turning occasionally until golden brown and crispy. Use a slotted spoon to transfer the cooked shrimp to a paper towel-lined plate.

Prepare Firecracker Sauce: In a small bowl, mix together the mayonnaise, sriracha, honey, and soy sauce until well combined. Taste and adjust the heat with more sriracha if desired.

Serve: Drizzle the firecracker sauce over the crispy shrimp or serve it on the side for dipping. Garnish with chopped green onions for an extra pop of flavor.

Enjoy: Serve immediately while hot and crispy!
