2 cups elbow macaroni

1 can (12 oz) tuna, drained and flaked

1 cup cherry tomatoes, halved

1/2 cup diced cucumber

1/2 cup diced red bell pepper

1/4 cup finely chopped red onion

1/2 cup frozen peas, thawed

1/2 cup mayonnaise

2 tablespoons Dijon mustard

1 tablespoon apple cider vinegar

Salt and pepper to taste

Fresh parsley, for garnish

Cook the Macaroni: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package directions until al dente. Drain and rinse under cold water to cool completely.

    Prepare the Dressing: In a large mixing bowl, whisk together mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper until smooth and creamy. Adjust seasoning according to taste.

      Combine Ingredients: Once the macaroni is cooled, add it to the mixing bowl with the dressing. Then, add the tuna, cherry tomatoes, cucumber, red bell pepper, red onion, and peas. Gently fold everything together until well combined.

        Chill: Cover the salad with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld and the salad to chill.
