Ingredients

1 can (5 oz) of premium tuna in olive oil, drained

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

1 tablespoon diced capers

1 small celery stalk, finely chopped

1/4 small red onion, finely chopped

Salt and pepper to taste

4 slices of sourdough bread

4 slices of aged cheddar cheese

2 tablespoons unsalted butter, softened

Fresh arugula or spinach leaves (optional for garnish)

Slices of ripe tomato (optional for garnish)

Instructions

In a medium mixing bowl, combine the drained tuna, mayonnaise, Dijon mustard, capers, chopped celery, and red onion. Season the mixture with salt and pepper to taste. Mix well until everything is evenly combined.

Heat a non-stick skillet over medium heat. While the skillet is warming, butter one side of each slice of sourdough bread generously.

Take two slices of bread (buttered side down) and place them in the hot skillet. Top each slice with two cheese slices, followed by an even layer of the tuna mixture.

If desired, add a slice of ripe tomato and a handful of fresh arugula or spinach on top of the tuna mixture, then cover with the remaining slices of bread (buttered side up).

Cook for about 3-4 minutes until the bottom slice is golden brown and crispy. Carefully flip the sandwiches using a spatula and cook for another 3-4 minutes until the other side is also golden, and the cheese is melty.

Once both sides are cooked to perfection, remove the sandwiches from the skillet and let them cool for a minute before slicing them in half.

Serve immediately, enjoying the delicious warm tuna melt with crispy bread!
