Tuna Pasta Bake

Ingredients
  

300g penne pasta

1 can (400g) tuna in olive oil, drained

1 can (400g) diced tomatoes

1 cup frozen peas

1 cup corn kernels (fresh or frozen)

1 red bell pepper, diced

1 onion, chopped

2 cloves garlic, minced

1 tsp dried oregano

1 tsp dried basil

1/2 tsp black pepper

2 cups shredded Mozzarella cheese

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

Salt to taste

Fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 200°C (400°F).

    Cook the pasta: In a large pot of salted boiling water, add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

      Sauté the vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and diced red bell pepper. Sauté for 3-4 minutes until softened. Then, add the minced garlic and cook for an additional 1 minute until fragrant.

        Combine the ingredients: Stir in the canned diced tomatoes (with juice), drained tuna, frozen peas, corn, oregano, basil, and black pepper. Cook for about 5 minutes until heated through. Taste and add salt if necessary.

          Mix pasta with the sauce: In a large bowl, combine the cooked pasta with the tuna mixture and 1 1/2 cups of the shredded Mozzarella cheese. Stir gently until well mixed.

            Transfer to the baking dish: Pour the pasta mixture into a greased baking dish (approximately 9x13 inches). Spread it out evenly.

              Top with cheese: Sprinkle the remaining Mozzarella cheese and grated Parmesan cheese over the top of the pasta mix.

                Bake: Place the baking dish in the preheated oven and bake for about 20-25 minutes, or until the cheese is bubbly and golden brown.

                  Garnish and Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired and serve warm.
