Turkey Pot Pie

This turkey pot pie is a simple dinner recipe made with everyday ingredients. Perfect for busy days and family meals.

Ingredients
  

2 cups cooked turkey, shredded or diced

1 cup carrots, diced

1 cup peas (fresh or frozen)

1 cup celery, diced

1/2 cup onion, chopped

3 cloves garlic, minced

4 cups chicken or turkey broth

1/2 cup heavy cream

1/4 cup butter

1/4 cup all-purpose flour

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper, to taste

1 tablespoon olive oil

1 tablespoon Worcestershire sauce

1 packaged pie crust (homemade or store-bought), for top and bottom crust

1 egg (for egg wash)

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large pot, heat olive oil over medium heat. Add the onion, garlic, carrots, and celery. Sauté until softened, about 5-7 minutes.

      Stir in the peas and cook for an additional 2 minutes.

        Sprinkle the flour over the sautéed vegetables and stir well to coat.

          Slowly whisk in the broth and heavy cream. Stir in the thyme, rosemary, Worcestershire sauce, salt, and pepper. Cook until the mixture thickens, about 5 minutes.

            Add the shredded turkey and mix well. Remove from heat and let cool slightly.

              Roll out the pie crust and fit one layer into a 9-inch pie pan, trimming off excess edges.

                Pour the turkey mixture into the pie crust, spreading evenly.

                  Cover with the second pie crust, sealing the edges by crimping with a fork. Cut a few slits in the top crust to allow steam to escape.

                    In a small bowl, whisk the egg and use it to brush over the top crust for a golden finish.

                      Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the filling is bubbling.

                        Let the pot pie cool for about 10 minutes before serving. Enjoy your hearty Turkey Pot Pie!
