Ingredients
  

  • 2 cups plain Greek yogurt at room temperature
  • 1 tablespoon fresh lemon juice for tanginess
  • 1/2 teaspoon salt adjust to taste
  • 3 cloves garlic minced and sautéed
  • 4 large eggs fresh for poaching
  • 2 tablespoons unsalted butter for sauce
  • 1 teaspoon red pepper flakes for spice
  • 1 tablespoon fresh dill chopped, for garnish
  • 1 tablespoon olive oil for sautéing garlic
  • black pepper to taste

Instructions
 

  • In a bowl, mix the Greek yogurt with lemon juice and salt until smooth and creamy. Set aside to let the flavors meld.
  • In a skillet, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1-2 minutes. Avoid browning the garlic.
  • In a pot, bring water to a gentle simmer. Carefully crack the eggs into the simmering water, cooking for about 3-4 minutes for a soft poach. Remove with a slotted spoon.
  • In a separate small saucepan, melt the butter over low heat and stir in the red pepper flakes until fragrant, about 1 minute.
  • To serve, spread the yogurt mixture on a plate, place the poached eggs on top, and drizzle with the spiced butter sauce. Garnish with sautéed garlic and fresh dill.
