Ingredients
  

1 kg (2.2 lbs) baby potatoes, washed and scrubbed

1 small red onion, finely chopped

1 small cucumber, diced

1 red bell pepper, diced

100 g (3.5 oz) black olives, pitted and sliced

100 g (3.5 oz) feta cheese, crumbled

Fresh parsley, chopped (for garnish)

1/4 cup olive oil

2 tbsp red wine vinegar

1 tsp Dijon mustard

Salt and pepper to taste

Instructions
 

Cook the Potatoes: Place the potatoes in a large pot, cover with water, and bring to a boil. Cook for about 15-20 minutes or until fork-tender. Drain and let them cool slightly.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper until well combined.

      Chop the Vegetables: While the potatoes are cooling, finely chop the red onion, cucumber, and red bell pepper. Set aside.

        Combine Ingredients: Once the potatoes are cool enough to handle, cut them into bite-sized pieces (you can peel them if you prefer). In a large mixing bowl, combine the potatoes, red onion, cucumber, red bell pepper, black olives, and crumbled feta cheese.

          Dress the Salad: Pour the dressing over the mixed ingredients and gently toss to combine, making sure everything is well-coated.

            Garnish and Serve: Transfer the salad to a serving bowl and garnish with freshly chopped parsley. Serve immediately or refrigerate for up to 2 hours for the flavors to meld.
