Ingredients

For the Patty Melt:

1 lb ground beef (80/20 blend)

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

4 slices of rye or sourdough bread

4 slices of Swiss cheese

1 medium onion, thinly sliced

2 tbsp butter (for grilling)

For the Secret Sauce:

1/2 cup mayonnaise

2 tbsp ketchup

1 tbsp Dijon mustard

1 tsp Worcestershire sauce

1 tsp garlic powder

1 tsp smoked paprika

Salt and pepper to taste

Instructions

Make the Secret Sauce: In a small bowl, combine mayonnaise, ketchup, Dijon mustard, Worcestershire sauce, garlic powder, smoked paprika, salt, and pepper. Stir well until smooth. Cover and refrigerate while you prepare the patty melt.

Prepare the Patties: In a large bowl, mix the ground beef with garlic powder, onion powder, salt, and pepper. Form the mixture into two equal patties, making a slight indentation in the center for even cooking.

Cook the Onions: In a skillet, add a little butter over medium heat. Add the sliced onions and cook them until they are caramelized and golden brown, about 10-15 minutes. Stir occasionally to avoid burning. Remove from heat and set aside.

Cook the Patties: In the same skillet, add more butter if needed and increase the heat to medium-high. Cook the patties for about 3-4 minutes on each side, or until they reach your desired doneness (130°F for medium-rare). In the last minute of cooking, place a slice of Swiss cheese on top of each patty to melt.

Assemble the Melt: Evenly spread the secret sauce on one side of each slice of bread. On two of the bread slices (sauce side up), place a cheese-topped patty, followed by a generous helping of caramelized onions, and then top with the other slice of bread (sauce side down).

Grill the Sandwiches: Wipe the skillet clean and return it to medium heat. Butter the outside of each sandwich and place them in the skillet. Grill for about 3-4 minutes on each side, or until golden brown and crispy.

Serve: Slice the patty melt in half and serve hot with extra secret sauce on the side for dipping.
