Ingredients

  • 2 cups all-purpose flour for coating the wings
  • 1 tablespoon baking powder to enhance crispiness
  • 1/2 teaspoon cayenne pepper for heat
  • 3 cloves garlic minced
  • 1 cup Frank's RedHot sauce for the buffalo sauce
  • 2 tablespoons unsalted butter melted for sauce
  • 1 teaspoon smoked paprika for flavor
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • salt and pepper to taste

Instructions

  • Preheat your oven to 425°F (220°C) and line a baking sheet with aluminum foil, placing a wire rack on top to allow air circulation.
  • In a large bowl, mix the all-purpose flour, baking powder, cayenne pepper, smoked paprika, garlic powder, onion powder, salt, and pepper. Toss the chicken wings in this dry mix until evenly coated.
  • Arrange the coated wings on the wire rack in a single layer, ensuring they are not touching. Bake for 25 minutes or until they are golden brown and crispy, flipping halfway through.
  • While the wings are baking, prepare the buffalo sauce by combining the Frank's RedHot sauce, melted butter, and minced garlic in a saucepan over medium heat until heated through.
  • Once the wings are done baking, remove them from the oven and immediately toss them in the buffalo sauce until well coated. Return them to the oven for an additional 5 minutes to set the sauce.
  • Remove the wings from the oven, allow them to rest for a couple of minutes, then serve hot with celery sticks and blue cheese dressing.

Notes

Tip 1: For extra crispiness, let the wings sit uncovered in the fridge for an hour before coating.
Tip 2: Store leftovers in an airtight container in the fridge for up to 3 days.
Variation: Try using different hot sauces or add honey for a sweet and spicy twist.
