To fully appreciate Sweetheart Shortbread Cookies, it’s essential to understand the history and characteristics of shortbread itself. Originating in Scotland, shortbread has been a beloved treat since the 16th century. Initially, these cookies were made from leftover dough from bread, which was then sweetened and baked into a delightful snack. Over the years, shortbread evolved into the classic recipe we know today, characterized by its buttery richness and crumbly texture.

Ingredients

1 cup unsalted butter, softened

½ cup powdered sugar

1 teaspoon vanilla extract

2 cups all-purpose flour

¼ teaspoon salt

½ cup cornstarch

Red and pink sprinkles (for decoration)

Optional: royal icing for decorating (see below)

Instructions

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy using a hand mixer or stand mixer.

Mix in the vanilla extract until well combined.

In a separate bowl, whisk together the all-purpose flour, salt, and cornstarch. Gradually add this dry mixture into the butter mixture and mix until just combined, forming a soft dough.

Chill the dough in the refrigerator for about 20 minutes, which will make it easier to handle.

On a lightly floured surface, roll out the chilled dough to about ¼ inch thickness. Use a heart-shaped cookie cutter to cut out shapes and place them on the prepared baking sheets.

Sprinkle red and pink sprinkles on top of the cookie shapes, pressing them gently into the dough.

Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden. Be careful not to overbake.

Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

                    Optional Royal Icing Decoration:

                      - If desired, make royal icing by whisking together 2 egg whites (or 1 tablespoon of meringue powder with 2 tablespoons of water) with 4 cups of powdered sugar and a few drops of lemon juice until smooth. Use it to decorate cooled cookies as desired.

Prep Time: 25 minutes | Total Time: 45 minutes | Servings: About 24 cookies
