1 cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 tsp vanilla extract

2 ½ cups all-purpose flour

1 tsp baking powder

½ tsp salt

1/4 cup cocoa powder

1/2 cup red and pink gel food coloring (or color of your choice)

1/4 cup powdered sugar (for dusting)

Instructions
 

Prepare the Dough: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing until well combined.

    Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry mixture to the wet ingredients, mixing until a dough forms.

      Divide the Dough: Divide the dough into three equal portions. Leave one portion plain, add the cocoa powder to the second portion, and mix well until fully incorporated. Color the third portion with red and pink gel food coloring, kneading until the color is uniform.

        Roll Out the Dough: Place each portion of dough between two sheets of parchment paper. Roll out each color into a rectangle about 1/8 inch thick.

          Layer the Dough: Carefully remove the top layer of parchment from the colored dough. Place the cocoa dough on top of the colored dough, pressing gently to adhere. Remove the top layer of parchment from the cocoa dough. Finally, place the plain dough on top of the cocoa dough, pressing down lightly.

            Roll into a Log: Starting from one end, use the parchment paper to help you roll the dough into a tight log. Make sure to roll it evenly and tightly. Wrap the log in plastic wrap and refrigerate for at least 1 hour, or until firm.

              Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

                Slice the Cookies: Once the dough is firm, unwrap it and slice it into 1/4-inch thick rounds. Place them on the prepared baking sheets, spacing them about 2 inches apart.

                  Bake: Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Be careful not to overbake.

                    Cool and Dust: Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely. Once cooled, dust lightly with powdered sugar if desired.
