Ingredients

For the Puff Pastry:

1 package (17.3 oz) frozen puff pastry sheets, thawed

1 egg (for egg wash)

For the Vanilla Custard Filling:

2 cups whole milk

1/2 cup granulated sugar

4 large egg yolks

1/4 cup cornstarch

2 teaspoons pure vanilla extract

2 tablespoons unsalted butter

For the Topping:

1/2 cup powdered sugar (for dusting)

Fresh berries (for garnish, optional)

Instructions

Prepare the Puff Pastry:

    - Preheat your oven to 400°F (200°C).

      - Roll out the thawed puff pastry on a lightly floured surface until smooth. Cut into two rectangles (approximately 10x8 inches each).

        - Place one rectangle on a baking sheet lined with parchment paper. Prick the surface all over with a fork to prevent puffing up too much. Brush with egg wash (beaten egg).

          - Bake in the preheated oven for 15-20 minutes, or until golden brown and puffed. Remove from the oven and allow to cool.

            Prepare the Vanilla Custard:

              - In a medium saucepan, heat the milk over medium heat until just steaming (do not boil).

                - In a separate bowl, whisk together the sugar, egg yolks, and cornstarch until smooth. Gradually pour the hot milk into the egg mixture, whisking constantly to temper the eggs.

                  - Return the mixture to the saucepan and cook over medium heat, stirring constantly until it thickens and comes to a gentle boil. This should take about 5-7 minutes.

                    - Remove from heat and stir in the vanilla extract and butter until smooth. Let it cool to room temperature, then cover and refrigerate until set.

                      Assemble the Cake:

                        - Once the puff pastry layers have cooled, spread the cooled vanilla custard over the first layer of puff pastry. Place the second layer of puff pastry on top of the custard.

                          - Gently press down to ensure the layers adhere together.

                            Final Touches:

                              - Refrigerate the assembled cake for at least 1 hour to set.

                                - Before serving, dust the top with powdered sugar and garnish with fresh berries if desired.

                                  Slice and Serve:

                                    - Cut into squares or rectangles and enjoy your luscious Vanilla Custard Puff Pastry Cake with a cup of tea or coffee!
