Ingredients
  

2 cups all-purpose flour

2 tablespoons granulated sugar

1 teaspoon baking powder

½ teaspoon ground cinnamon

½ teaspoon salt

2 large eggs

1 cup whole milk

1 tablespoon vanilla extract

½ cup unsalted butter, melted

¼ cup powdered sugar (for dusting)

Vegetable oil (for frying)

Instructions
 

In a medium mixing bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, and salt until well combined.

    In a separate bowl, beat the eggs and then stir in the milk and vanilla extract. Add the melted butter to the wet mixture and combine.

      Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms. If the dough is too sticky, add a little more flour until it is manageable.

        On a lightly floured surface, roll out the dough to about ½-inch thickness. Cut into squares or rectangles, approximately 2x2 inches.

          In a deep skillet, heat about 2 inches of vegetable oil to 350°F (175°C). Carefully drop in the beignet squares, a few at a time, making sure not to overcrowd the pan.

            Fry each beignet for about 2-3 minutes on each side, or until they are golden brown and puffed up. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

              Once all beignets are fried, dust them generously with powdered sugar while they are still warm.

                Serve immediately, preferably with a side of chocolate sauce or fruit preserves for dipping!
