1 lb (450g) ground sausage (your choice of spicy or mild)

16 oz (450g) Velveeta cheese, cubed

10 oz (284g) can of RoTel diced tomatoes and green chilies, undrained

1 cup shredded sharp cheddar cheese

1/2 cup cream cheese, softened

1/2 tsp garlic powder

1/2 tsp onion powder

1/4 tsp cayenne pepper (optional, for added heat)

Tortilla chips, for serving

Cook the Sausage: In a large skillet over medium heat, cook the ground sausage until browned and fully cooked, breaking it up into small pieces with a spatula. Drain any excess grease.

    Melt the Velveeta: Lower the heat to medium-low, and add the cubed Velveeta cheese and cream cheese to the skillet with the sausage. Stir until the cheeses are melted and combined.
