1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

Pinch of salt

For the Cheesecake Filling:

16 oz (two 8 oz packages) cream cheese, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup sour cream

½ cup fresh strawberry puree (from about 6-8 strawberries)

For the Strawberry Topping:

1 cup fresh strawberries, halved or quartered

2 tablespoons granulated sugar

1 tablespoon lemon juice

Optional: Mint leaves for garnish

Instructions
 

Prepare the Crust:

    - Preheat your oven to 325°F (163°C).

      - In a medium bowl, mix the graham cracker crumbs, melted butter, sugar, and salt until well combined.

        - Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes until lightly golden. Let it cool completely.

          Make the Cheesecake Filling:

            - In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add in the sugar, and continue to beat until creamy.

              - Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, sour cream, and strawberry puree until fully combined and smooth.

                Combine and Bake:

                  - Pour the cheesecake filling into the cooled crust, smoothing the top with a spatula.

                    - Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional 1 hour. This helps prevent cracking.

                      Chill the Cheesecake:

                        - Remove the cheesecake from the oven and let it come to room temperature. Once cooled, cover with plastic wrap and refrigerate for at least 4 hours or overnight for best results.

                          Prepare the Strawberry Topping:

                            - In a small bowl, combine the halved strawberries, sugar, and lemon juice. Let sit for 15-20 minutes, allowing the strawberries to release their juices.

                              Serve:

                                - Once chilled, remove the cheesecake from the springform pan. Top with the macerated strawberries before serving.

                                  - Garnish with fresh mint leaves if desired.
