2 cups watermelon puree (fresh watermelon blended and strained)

1 ½ cups crushed graham crackers

½ cup unsalted butter, melted

1 cup granulated sugar

16 oz cream cheese, softened

1 tsp vanilla extract

1 cup heavy whipping cream

2 tbsp gelatin powder (or 1 packet)

¼ cup cold water

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the crust: In a bowl, combine the crushed graham crackers with melted butter and ¼ cup of granulated sugar. Mix until the crumbs are evenly coated. Press this mixture firmly into the bottom of a 9-inch springform pan to create an even crust layer. Chill in the refrigerator while you prepare the filling.

    Make the gelatin mixture: In a small bowl, sprinkle the gelatin powder over the cold water and let it bloom for about 5 minutes. Then, place it in the microwave for about 10-15 seconds until dissolved and set aside.

      Blend the cheesecake filling: In a large mixing bowl, beat the softened cream cheese and the remaining ¾ cup granulated sugar until smooth and creamy. Add in the vanilla extract and mix well.

        Incorporate watermelon puree: Gradually mix in the watermelon puree until fully combined.

          Combine gelatin with the filling: Stir the dissolved gelatin mixture into the cheesecake mixture until everything is well combined.

            Whip the cream: In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the watermelon cheesecake mixture, being careful not to deflate it.

              Assemble the cheesecake: Pour the watermelon cheesecake filling onto the chilled graham cracker crust. Smooth the top with a spatula. Chill in the refrigerator for at least 4 hours, or overnight, until set.
