Ingredients
  

4 cups of fresh watermelon, cubed

1 cup of feta cheese, crumbled

1/4 cup of fresh mint leaves, chopped

2 tablespoons of olive oil

1 tablespoon of balsamic vinegar

Salt and pepper to taste

Zest of 1 lime

Juice of 1 lime

Optional: 1/4 cup of red onion, thinly sliced

Instructions
 

In a large mixing bowl, combine the cubed watermelon and crumbled feta cheese.

    If using, add the thinly sliced red onion to the bowl.

      In a separate small bowl, whisk together the olive oil, balsamic vinegar, lime juice, lime zest, salt, and pepper to create a dressing.

        Pour the dressing over the watermelon and feta mixture and toss gently to combine, ensuring the feta doesn’t break down too much.

          Add the chopped mint leaves and give the salad one last gentle toss.

            Serve immediately or chill in the refrigerator for about 15 minutes to enhance the flavors.
