Ingredients
  

  • 4 cups seedless watermelon cubed and chilled
  • 1 cup fresh mint leaves loosely packed
  • 1 lime fresh lime juice about 2 tablespoons
  • 2 tablespoons agave syrup adjust to taste
  • 2 cups sparkling water chilled
  • 1/2 teaspoon sea salt to enhance flavor
  • ice cubes for serving
  • 4 slices lime for garnish
  • 4 sprigs mint for garnish

Instructions
 

  • In a blender, combine the cubed watermelon and fresh lime juice. Blend until smooth, then strain the mixture through a fine mesh sieve into a large pitcher to remove the pulp.
  • In a separate bowl, muddle the fresh mint leaves with the agave syrup and sea salt to release the mint oils. Add this mixture to the watermelon juice in the pitcher.
  • Slowly pour in the chilled sparkling water to the pitcher, stirring gently to combine without losing the fizz.
  • Fill four glasses with ice cubes, and pour the watermelon mint mixture over the ice. Garnish each glass with a slice of lime and a sprig of mint.

Notes

Tip 1: For a more pronounced mint flavor, let the mint steep in the watermelon juice for 10 minutes before straining.
Tip 2: This mocktail can be made ahead of time; just add the sparkling water right before serving.
Variation: Add a splash of coconut water for an extra tropical twist.
