Ingredients
  

1 lb boneless, skinless chicken thighs (cut into 1-inch cubes)

1/4 cup olive oil

3 tbsp fresh lemon juice (about 1 large lemon)

Zest of 1 lemon

3 cloves garlic (minced)

1 tsp dried oregano

1 tsp paprika

Salt and pepper to taste

1 cup bell peppers (various colors, cut into 1-inch pieces)

1 cup red onion (cut into 1-inch pieces)

Fresh parsley (for garnish, optional)

Instructions
 

In a large bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, paprika, salt, and pepper to create a marinade.

    Add the cubed chicken thighs to the marinade, ensuring they are well coated. Cover the bowl and refrigerate for at least 1 hour (up to 4 hours for more flavor).

      While the chicken is marinating, soak wooden skewers in water for 30 minutes to prevent burning on the grill.

        Preheat your grill to medium-high heat (about 375°F - 400°F).

          Thread the marinated chicken, bell peppers, and red onion pieces onto the soaked skewers, alternating between chicken and veggies.

            Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks (internal temperature should reach 165°F).

              Remove the skewers from the grill and let them rest for a few minutes. Garnish with fresh parsley if desired before serving.
