Ingredients
  

  • 2 cups whole milk ricotta cheese preferably fresh
  • 1 tablespoon fresh lemon juice for brightness
  • 1/2 teaspoon sea salt adjust to taste
  • 3 cloves garlic minced
  • 1 cup sliced baguette about 10-12 slices
  • 2 tablespoons extra virgin olive oil for drizzling and toasting
  • 1 tablespoon fresh chives chopped for garnish
  • 1 tablespoon fresh basil chopped for garnish
  • black pepper to taste

Instructions
 

  • Preheat your oven to 400°F (200°C). Arrange the sliced baguette on a baking sheet and brush both sides with olive oil. Toast in the oven for about 10-12 minutes, or until golden brown and crisp.
  • In a mixing bowl, combine the ricotta cheese, minced garlic, fresh lemon juice, and sea salt. Using a hand mixer or food processor, whip the mixture until it is smooth and creamy, about 2-3 minutes.
  • Once the crostini are toasted, remove them from the oven and let them cool slightly. Spread a generous dollop of the whipped ricotta mixture onto each slice.
  • Garnish the crostini with chopped chives, basil, and a sprinkle of black pepper. For extra flavor, drizzle with a bit more extra virgin olive oil before serving.
