For the cheesecake layer:

8 oz cream cheese, softened

1 cup powdered sugar

1 tsp vanilla extract

1/2 cup heavy cream

For the white chocolate pudding:

1 cup whole milk

1 cup white chocolate chips

2 tbsp cornstarch

2 tbsp sugar

1 tsp vanilla extract

For the berry layer:

1 cup mixed berries (strawberries, blueberries, raspberries)

1 tbsp sugar

1 tbsp lemon juice

For garnishing:

Whipped cream

Fresh mint leaves

Extra mixed berries

Instructions
 

Prepare the Berry Layer:

    - In a bowl, combine the mixed berries, sugar, and lemon juice. Toss gently to coat and let it macerate for at least 15 minutes while preparing the other layers.

      Make the Cheesecake Layer:

        - In a large mixing bowl, beat the softened cream cheese with an electric mixer until creamy and smooth.

          - Gradually add powdered sugar and vanilla extract, mixing until fully combined.

            - In a separate bowl, whip the heavy cream until soft peaks form and then carefully fold it into the cream cheese mixture until well-blended and fluffy.

              Prepare the White Chocolate Pudding:

                - In a medium saucepan over medium heat, combine the milk and half of the sugar. Stir occasionally until it’s warm.

                  - In a separate bowl, whisk together the cornstarch and remaining sugar.

                    - Slowly pour the cornstarch mixture into the warm milk while continuously whisking to prevent lumps.

                      - Add the white chocolate chips, stirring until melted and the pudding thickens (about 5 minutes). Remove from heat and stir in vanilla extract. Let cool to room temperature.

                        Assemble the Pudding Cups:

                          - Start by layering a couple of tablespoons of the berry mixture at the bottom of each glass or cup.

                            - Next, add a generous layer of the cheesecake mixture on top.

                              - Follow with a layer of the white chocolate pudding, smoothing it out evenly.

                                - Add another layer of berries and top with the cheesecake mixture again. Finish with a layer of white chocolate pudding.

                                  Chill and Serve:

                                    - Cover each cup with plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld and the pudding to set.

                                      - When ready to serve, top each cup with a dollop of whipped cream, a sprinkle of fresh mixed berries, and a mint leaf for garnish.
