16 Ritz crackers

1/2 cup creamy peanut butter

1 cup white chocolate chips

1 tablespoon coconut oil (optional, for melting)

1/4 cup crushed peanuts (for topping, optional)

Sea salt (a pinch, for sprinkling)

Prepare the Ritz Base: Lay out 8 Ritz crackers on a baking sheet lined with parchment paper. These will serve as the bottom layer for your cookies.

    Spread the Peanut Butter: Evenly spread about 1 tablespoon of creamy peanut butter on each cracker.

      Create the Sandwich: Top each peanut butter spread cracker with another Ritz cracker, creating a sandwich. Press them gently together to ensure they stick.

        Melt the White Chocolate: In a microwave-safe bowl, combine the white chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring in between, until the mixture is smooth and fully melted.

          Dip the Cookies: Carefully dip each Ritz cracker sandwich into the melted white chocolate, allowing the excess chocolate to drip off.

            Add Toppings: Place the dipped cookies back on the parchment-lined baking sheet. If desired, sprinkle crushed peanuts and a light pinch of sea salt on top of the melted white chocolate before it sets.

              Chill to Set: Transfer the baking sheet to the refrigerator for about 30 minutes or until the white chocolate has hardened.

                Serve: Once fully set, remove the cookies from the baking sheet. Serve immediately or store in an airtight container in the fridge for up to a week.
