1 cup creamy peanut butter

1 cup white chocolate chips

2 tablespoons coconut oil (or vegetable shortening)

Sea salt (optional, for sprinkling)

Prepare the Ritz Crackers: Lay half of the Ritz crackers (about 17) face up on a baking sheet lined with parchment paper. These will be your cookie bases.

    Make the Peanut Butter Filling: In a medium bowl, use a spatula to mix the creamy peanut butter until it's smooth and easy to spread. If you prefer it sweeter, you can add a tablespoon of powdered sugar to the mixture and stir until combined.

      Assemble the Cookies: Using a spoon or knife, spread about one tablespoon of peanut butter on each Ritz cracker on the baking sheet. Top each with another Ritz cracker to create a sandwich.
