Ingredients

1 cup coconut water

1/2 cup freshly squeezed lime juice (about 4 limes)

2 tablespoons honey or agave syrup (adjust to taste)

10 fresh mint leaves

1 cup soda water (or sparkling water)

Crushed ice

Lime slices and mint sprigs for garnish

Shredded coconut for rim (optional)

Salt for rim (optional)

Instructions

Prepare the Glasses: If you'd like to rim your glasses, start by moistening the edges of your serving glasses with a lime wedge. Then, dip the rim into a mixture of shredded coconut and a pinch of salt to create a festive touch.

Muddle the Mint: In a mixing glass, place the fresh mint leaves and honey or agave syrup. Using a muddler or the back of a spoon, gently press the mint to release its oils, being careful not to tear the leaves.

Add Coconut Water and Lime Juice: Pour in the coconut water and freshly squeezed lime juice. Stir gently to combine the ingredients.

Add Crush Ice: Fill your prepared glasses with crushed ice up to the brim.

Pour the Mixture: Divide the coconut-lime mixture evenly between the glasses over the crushed ice.

Top with Soda Water: Gently pour soda water over the top of each glass to add fizz, filling to the desired level.

Garnish and Serve: Garnish with lime slices and a sprig of mint in each glass. Serve immediately and delight in the refreshing holiday flavors!
