Ingredients

1 whole salmon (about 4-5 lbs), cleaned and scaled

2 lemons, thinly sliced

1 bunch of fresh dill

1 bunch of fresh parsley

1 onion, thinly sliced

4 cloves garlic, crushed

1 cup white wine (or vegetable broth for a non-alcoholic version)

2 tablespoons olive oil

Salt and pepper to taste

Additional seasonings (optional: capers, mustard, or your favorite herbs)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Baking Dish: Choose a large, shallow baking dish that can fit the whole fish. Drizzle 1 tablespoon of olive oil to lightly coat the bottom.

Layer Ingredients: Lay the sliced onions evenly across the bottom of the dish. Place half of the dill and parsley on top of the onions.

Stuff the Salmon: Place the whole salmon in the dish. Stuff the cavity of the fish with lemon slices, garlic, and the remaining dill and parsley.

Season the Salmon: Drizzle the remaining olive oil over the surface of the fish. Season generously with salt and pepper and any additional seasonings you prefer.

Add Liquid: Pour the white wine (or vegetable broth) around the fish, ensuring that it doesn’t wash away the seasonings.

Cover and Bake: Cover the dish tightly with aluminum foil. Bake in the preheated oven for about 30-40 minutes, or until the salmon is just cooked through and flakes easily with a fork.

Serve: Carefully remove the dish from the oven. Lift the salmon carefully out of the liquid and onto a serving platter. Let it rest for a few minutes, then serve with additional lemon slices and a sprinkle of fresh herbs for garnish.
