4 cups mixed winter greens (such as kale, spinach, and arugula)

1 cup roasted Brussels sprouts, halved

1 cup pomegranate seeds

1 cup diced apples (preferably Granny Smith for tartness)

½ cup crumbled feta cheese

½ cup candied pecans

¼ cup thinly sliced red onion

⅓ cup olive oil

3 tbsp apple cider vinegar

2 tbsp honey

2 tbsp Dijon mustard

Salt and pepper to taste

Instructions
 

Prepare the Greens: In a large salad bowl, combine the mixed winter greens to form a base.

    Add Roasted Brussels Sprouts: If you haven't roasted the Brussels sprouts yet, preheat the oven to 400°F (200°C). Toss halved Brussels sprouts with olive oil, salt, and pepper, and roast for about 20-25 minutes or until golden brown and crisp. Allow to cool slightly before adding to the salad.

      Incorporate Fruits and Nuts: Add the pomegranate seeds, diced apples, and candied pecans to the greens and roasted Brussels sprouts.

        Combine Cheese and Onion: Gently fold in the crumbled feta cheese and sliced red onion for flavor and texture.

          Make the Honey Mustard Dressing: In a small bowl or mason jar, whisk together the olive oil, apple cider vinegar, honey, and Dijon mustard until emulsified. Season with salt and pepper to taste.

            Toss the Salad: Drizzle the honey mustard dressing over the salad just before serving, and toss gently to combine all the ingredients evenly.

              Serve Immediately: Garnish with additional pomegranate seeds or crumbled feta if desired, and serve as a festive side dish.
