For the Brioche Dough:

4 cups all-purpose flour

1/2 cup granulated sugar

1 teaspoon salt

1 tablespoon active dry yeast

1 cup whole milk, warmed to lukewarm

4 large eggs

1 cup unsalted butter, softened and cubed

1 tablespoon vanilla extract

For the Coffee Filling:

1/4 cup brown sugar

2 tablespoons instant coffee granules

1 teaspoon ground cinnamon

1/2 cup unsalted butter, softened

For the Topping:

1 egg (for egg wash)

1/4 cup powdered sugar

1 tablespoon milk

Optional: chopped nuts (e.g., walnuts or pecans) for garnish

Instructions
 

Prepare the Dough: In a large mixing bowl, whisk together the warm milk and granulated sugar until dissolved. Sprinkle the yeast over the top and let it sit for about 5-10 minutes until foamy.

    Mix Ingredients: Add the eggs, vanilla extract, and salt to the yeast mixture. Gradually add the flour, mixing until combined. Once the dough begins to come together, add the softened butter cubes, one at a time, kneading with your hands or using a stand mixer with a dough hook attachment until the dough is smooth and elastic (about 8-10 minutes).

      First Rise: Place the dough in a greased bowl, cover it with a damp cloth or plastic wrap, and let it rise in a warm place for about 1-2 hours, or until it has doubled in size.

        Make the Coffee Filling: In a small bowl, mix together the brown sugar, instant coffee granules, and cinnamon until well combined. Set aside.

          Shape the Brioche: Once the dough has risen, punch it down and transfer it to a floured surface. Roll the dough into a rectangle (about 16x24 inches). Spread the softened butter over the surface of the dough and sprinkle the coffee filling evenly on top.

            Roll and Cut: Starting from one long edge, tightly roll the dough into a log. Cut the log into 12 equal pieces and place them cut-side up in a greased 9x13 inch baking dish or lined muffin tin.

              Second Rise: Cover the buns with a cloth and allow them to rise for another 30-60 minutes, until they puff up slightly.

                Preheat and Prepare for Baking: Preheat your oven to 350°F (175°C). In a small bowl, whisk the egg and brush it over the tops of the brioche buns.

                  Bake: Bake the buns for 25-30 minutes, or until they are golden brown and spring back when lightly pressed.

                    Glaze the Buns: While still warm, whisk together the powdered sugar and milk to create a glaze. Drizzle the glaze over the buns and sprinkle with chopped nuts if desired.

                      Serve and Enjoy: Allow the buns to cool slightly before serving. Enjoy them warm with a cup of winter coffee!
