Ingredients
  

For the Brioche Dough:

4 cups all-purpose flour

1/2 cup granulated sugar

1 tablespoon active dry yeast

1 teaspoon salt

1/2 cup whole milk, warmed

4 large eggs

1 teaspoon vanilla extract

1 cup unsalted butter, softened, cut into cubes

For the Coffee Filling:

1 cup brewed coffee, cooled

1/2 cup brown sugar, packed

2 teaspoons ground cinnamon

1/4 teaspoon nutmeg

1/4 cup chopped walnuts (optional)

For the Glaze:

1 cup powdered sugar

2 tablespoons brewed coffee

1 tablespoon milk

Pinch of salt

Instructions
 

Make the Brioche Dough:

    - In a large mixing bowl, combine the warm milk and active dry yeast. Let it sit for about 5 minutes until frothy.

      - Add the sugar, salt, eggs, and vanilla extract. Mix until combined.

        - Slowly incorporate the flour, mixing with a dough hook attachment on your mixer or by hand until the dough just begins to come together.

          - Gradually add the softened butter cubes, mixing until the dough is smooth and elastic (about 10 minutes).

            - Cover the bowl with plastic wrap and let it rise in a warm place for 1-2 hours, or until doubled in size.

              Prepare the Coffee Filling:

                - While the dough is rising, prepare the coffee filling. In a medium bowl, mix the cooled brewed coffee, brown sugar, cinnamon, nutmeg, and walnuts (if using) until well combined.

                  Shape the Buns:

                    - Once the dough has risen, punch it down and transfer it to a floured surface. Roll it out into a large rectangle (about 1/2 inch thick).

                      - Spread the coffee filling evenly across the dough, leaving a small border around the edges.

                        - Roll the dough tightly from the long edge to form a log. Cut it into 12 equal pieces.

                          Second Rise:

                            - Place the cut buns in a greased baking pan, leaving some space between each one. Cover with a kitchen towel and let them rise again for about 30-45 minutes until puffy.

                              Preheat the Oven:

                                - While the buns are rising, preheat your oven to 350°F (175°C).

                                  Bake the Buns:

                                    - Once risen, bake the brioche buns in the preheated oven for 20-25 minutes or until golden brown and cooked through.

                                      Glaze the Buns:

                                        - In a small bowl, whisk together the powdered sugar, brewed coffee, milk, and a pinch of salt until smooth. Drizzle the glaze over the warm buns after they have cooled slightly.
