1 cup plain Greek yogurt

1/2 cup vegetable oil

1 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

2 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon baking soda

2 ripe peaches, peeled and diced

1 tablespoon lemon juice

Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.

    Prepare Peaches: In a medium bowl, toss the diced peaches with lemon juice. Set aside to marinate while you prepare the batter.
