Ingredients
  

  • 1 pound boneless, skinless chicken thighs cut into strips
  • 2 tablespoons za'atar spice blend for marinating the chicken
  • 1 tablespoon lemon juice freshly squeezed
  • 3 cloves garlic minced
  • 4 pieces pita bread or flatbreads of choice
  • 1 cup Greek yogurt for serving
  • 1 cup cucumber diced for topping
  • 2 tablespoons olive oil for cooking the chicken
  • salt and pepper to taste

Instructions
 

  • In a mixing bowl, combine the chicken strips with za'atar spice blend, lemon juice, minced garlic, salt, and pepper. Let it marinate for at least 15 minutes to absorb the flavors.
  • Heat olive oil in a skillet over medium-high heat. Once hot, add the marinated chicken strips and cook for about 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through.
  • While the chicken is cooking, warm the pita bread in another skillet or oven until slightly toasted but still pliable.
  • Once the chicken is cooked, remove it from heat and assemble the flatbreads by placing a portion of the chicken in the center of each pita, then top with diced cucumber and a generous dollop of Greek yogurt.

Notes

Tip 1: For extra flavor, add sliced tomatoes or pickled vegetables as toppings.
Tip 2: These flatbreads can be made ahead and stored in an airtight container in the refrigerator for up to 2 days.
