Zucchini Gratin with Yellow Squash

Ingredients
  

2 medium zucchini, sliced thinly

2 medium yellow squash, sliced thinly

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Gruyère cheese (or your cheese of choice)

1/2 cup grated Parmesan cheese

1 cup panko breadcrumbs

2 tablespoons olive oil

1 teaspoon dried thyme (or 1 tablespoon fresh thyme, chopped)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Onions: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant.

      Prepare the Cream Mixture: In a mixing bowl, combine the heavy cream, thyme, salt, and pepper. Whisk until well blended, then set aside.

        Assemble the Gratin: In a greased 9x13-inch baking dish, layer half of the zucchini and yellow squash slices at the bottom. Follow with half of the sautéed onion and garlic mixture, then pour half of the cream mixture over it. Sprinkle half of the Gruyère cheese on top.

          Repeat Layers: Repeat the layers with the remaining zucchini and yellow squash, onion mixture, and cream mixture. Top with panko breadcrumbs and sprinkle the remaining Gruyère and Parmesan cheese evenly over the top.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the top is bubbly and golden brown.

              Garnish and Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
