Ingredients
  

2 cups butternut squash, peeled and cubed

2 cups Brussels sprouts, trimmed and halved

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon balsamic vinegar (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your air fryer to 400°F (200°C).

    In a large bowl, combine the butternut squash and Brussels sprouts. Drizzle with olive oil and sprinkle the garlic powder, smoked paprika, salt, and black pepper. Toss well to ensure all the vegetables are coated evenly.

      Place the seasoned vegetables in the air fryer basket in a single layer. If necessary, do this in batches to avoid overcrowding.

        Air fry for 15 minutes, shaking the basket halfway through to ensure even cooking. The vegetables should be tender and crisp at the edges.

          If desired, drizzle with balsamic vinegar during the last 2 minutes of cooking for added flavor.

            Once done, remove from the air fryer and transfer to a serving dish. Garnish with fresh parsley before serving.
