3 ripe bananas, mashed

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon salt

1 1/2 cups all-purpose flour

1/2 cup sour cream

1/2 cup chopped walnuts (optional)

1/2 teaspoon ground cinnamon (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking sheet or line it with parchment paper.

    Mix Wet Ingredients: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the mashed bananas and mix until combined. Then, incorporate the eggs one at a time, mixing well after each addition, and stir in the vanilla extract.

      Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, salt, and ground cinnamon (if using).

        Combine Mixtures: Gradually add the dry ingredients to the wet mixture, alternating with the sour cream. Start and end with the flour mixture. Mix just until combined; be careful not to overmix.

          Add Walnuts: If using, fold in the chopped walnuts gently into the batter.

            Bake the Cake: Pour the batter into the prepared baking sheet, smoothing the top with a spatula. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.

              Cool: Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
