1 tablespoon olive oil

1 packet taco seasoning (or homemade: 1 tsp chili powder, 1 tsp cumin, 1/2 tsp garlic powder, 1/2 tsp onion powder, salt, and pepper to taste)

1 cup chicken broth (low-sodium)

8 small corn or flour tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup shredded cheese (cheddar or Mexican blend)

1/4 cup sour cream or Greek yogurt

1 jalapeño, sliced (optional)

Fresh cilantro for garnish

Lime wedges for serving

Instructions
 

Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the sliced chicken strips and cook for about 5 minutes until golden brown.

    Season: Sprinkle the taco seasoning over the chicken and pour in the chicken broth. Stir to combine and bring to a simmer. Let it cook for an additional 5-7 minutes until the sauce thickens and the chicken is cooked through.

      Warm the Tortillas: While the chicken cooks, warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side or wrap them in foil and place in a warm oven.
